The Caribbean’s history is a rich tapestry shaped by indigenous heritage, European colonisation and vibrant cultural fusion across its islands.

Before European arrival, the region was home to indigenous peoples such as the Taíno and Carib communities. Following Christopher Columbus' first voyage, islands including Barbados, Jamaica and the Dominican Republic became key sites of European settlement, primarily under British and Spanish rule.

The Caribbean soon played a central role in the transatlantic slave trade, with enslaved Africans brought to work on sugar, rum and tobacco plantations. This period profoundly shaped the region’s identity, particularly in islands like Trinidad and Tobago and Saint Lucia, where African, European and later Indian and other influences blended to create today’s diverse cultures.

From the late 18th century through the 19th century, movements toward emancipation and independence began to transform the region. Over time, many islands gained independence from colonial powers, proudly forging their own national identities while preserving their historical roots.

  • Barbados – Famous for its flying fish, often served with cou-cou (a cornmeal and okra dish), and Bajan pepperpot, a rich stew of meat, spices, and hot peppers. Don’t miss sweet treats like coconut bread or rum cakes.

  • Dominican Republic – Try sancocho, a hearty stew with meat, plantains and root vegetables, or mangú, a mashed green plantain breakfast dish often served with fried cheese and salami. Fresh seafood and tropical fruits are also plentiful.

  • Jamaica – The island is renowned for jerk chicken or pork, marinated with spicy seasoning and slow-cooked over pimento wood. Curried goat, ackee and saltfish, and patties (flaky pastry filled with meat or vegetables) are also local favourites.

  • Trinidad & Tobago – A melting pot of flavours, enjoy doubles (curried chickpeas between fried flatbread), roti filled with spiced meat or vegetables, and bake and shark, a popular beach snack of fried shark in soft bread with fresh toppings.

  • Saint Lucia – Known for its fresh seafood, especially grilled fish and lobster, as well as green fig and saltfish, the island’s national dish. Tropical fruits like mango, papaya and coconut feature heavily in desserts and snacks.
